I don’t think I mentioned it on my blog, but in March, I gave up gluten. Over the past few years, I’ve read that going gluten-free can be beneficial for people with lupus, but being the carbaholic I am, it didn’t seem like a fun idea. This past winter, my Lupus was as bad as it’s ever been and I was looking for any solution that didn’t include more drugs…so I gave up gluten. I’ve actually been amazed at how good I’ve been feeling, but eating gluten-free hasn’t been easy.

I am not a gourmet baker on the best of days…throw a torn meniscus and a pair of crutches into the mix and my baking skills become practically non-existent. Don’t get me wrong…I’m a pretty good cook, but if you’re looking for something fancy schmancy, I’m not your girl! But oh how I wish I was…especially around the holidays! I’d love to be able to bake gorgeous looking cakes and cupcakes, but unfortunately I lack the skill and the time!

I’m not sure why, but I usually discover that I need a few more baking pans the week before Thanksgiving. This year I made a gazillion homemade rolls and I didn’t have enough baking sheets to let the rise and bake on! I wish this deal would have been around back then!
