Sometimes I make up my own recipes. They’re not usually pretty, but they’re usually pretty tasty! I recently whipped up some BBQ Chicken Nachos and they were super easy, super quick, and a HUGE HIT at our house!
This recipe is so easy to make and could be adapted to fit your families likes and dislikes! I don’t always measure ingredients, so add as much or as little as you like!
Here’s what you’ll need:
- Shredded Chicken
- BBQ Sauce (I used Jack Daniel’s BBQ Sauce)
- Tortilla Chips
- Shredded Cheese (You can use full-fat or low fat)
- Green Onions
- Tomatoes
- Black Olives (optional)
- Jalapenos (optional)
- Sour Cream (Use full fat, low-fat, or fat-free)
Preheat your oven to 350 degrees. Arrange chips on a baking sheet or oven safe plate and then sprinkle liberally with cheese (I’m a cheese-a-holic, so you could put a little less if you wanted.)
Mix together chicken and BBQ sauce. I like my nachos extra saucy, so I added quite a bit of BBQ Sauce, but again it’s up to you!
{This part of the recipe is like one of those decide-how-you-want-the-story-to-end books I always loved when I was growing up. I’ve tried this both ways and I think either one works so it’s up to you.}
Option 1: Add green onions, tomatoes, olives, and jalapenos and bake for 5 to 10 minutes until the cheese is melted. After you take it out of the oven, you can garnish it with sour cream.
Option 2: Bake for 5 to 10 minutes or until the cheese is melted. After you have removed the nachos from the oven, garnish with tomatoes, green onions, olives, jalapenos and sour cream!
VOILA! You have a super easy tasty meal that can be made in less than 15 minutes!
