BBQ Chicken Nachos Recipe

BBQ Chicken Nachos & Vera Bradley Placemat

Sometimes I make up my own recipes.  They’re not usually pretty, but they’re usually pretty tasty!  I recently whipped up some BBQ Chicken Nachos and they were super easy, super quick, and a HUGE HIT at our house!

This recipe is so easy to make and could be adapted to fit your families likes and dislikes!  I don’t always measure ingredients, so add as much or as little as you like!

Here’s what you’ll need:

  • Shredded Chicken
  • BBQ Sauce (I used Jack Daniel’s BBQ Sauce)
  • Tortilla Chips
  • Shredded Cheese (You can use full-fat or low fat)
  • Green Onions
  • Tomatoes
  • Black Olives (optional)
  • Jalapenos (optional)
  • Sour Cream (Use full fat, low-fat, or fat-free)

Preheat your oven to 350 degrees.  Arrange chips on a baking sheet or oven safe plate and then sprinkle liberally with cheese (I’m a cheese-a-holic, so you could put a little less if you wanted.)

Mix together chicken and BBQ sauce.  I like my nachos extra saucy, so I added quite a bit of BBQ Sauce, but again it’s up to you!

{This part of the recipe is like one of those decide-how-you-want-the-story-to-end books I always loved when I was growing up. I’ve tried this both ways and I think either one works so it’s up to you.}

Option 1:  Add green onions, tomatoes, olives, and jalapenos and bake for 5 to 10 minutes until the cheese is melted.  After you take it out of the oven, you can garnish it with sour cream.

Option 2:  Bake for 5 to 10 minutes  or until the cheese is melted.  After you have removed the nachos from the oven, garnish with tomatoes, green onions, olives, jalapenos and sour cream!

VOILA!  You have a super easy tasty meal that can be made in less than 15 minutes!

Ingredients
  • Shredded Chicken

  • Shredded Cheese (Full Fat or Low Fat)
  • Green Onions
  • Tomatoes
  • Jalapenos (optional)
  • Sour Cream
Instructions
  1. Preheat oven to 350 degrees.

We Love Fish Tacos

With our family’s hectic schedules, eating dinner as a family can sometimes be a little challenging.  And to be honest, our dinner menus are sometimes a little ordinary and quite possibly even boring! When I was asked to serve fish tacos at my house in honor of National Taco Day, I immediately agreed.  I know I’ve gotten into a rut lately so I thought I’d change things up a little and have us a little Fish Taco Fiesta!

I headed to the local dollar store to pick up some sombreros.  Unfortunately, all they had were crazy straw hats, but I picked up 2 anyway.  I pulled out brightly colored bowls and spoons to serve our taco toppings in.

I originally planned on making my tacos using tilapia, but when I visited the We Love Fish Tacos website and saw their Crunchy Fish tacos, I knew that was something I wanted to try.  I also thought that a little pineapple in our fish tacos might make for a fiesta of flavor.  I baked some Gorton’s Crunchy Fish Sticks and offered the family Ortega hard taco shells or whole wheat tortillas.  We had shredded cheese, pineapple, salsa, lettuce, and sour cream.  These fish tacos were anything but ordinary.  They were out of this world!  The pineapples added the perfect sweetness to the taco!

And the smiles on the faces of my hubby and kids as we took turns wearing the ridiculous hats added the perfect sweetness to our dinner!
